Baby Blues BBQ in Venice, Ca. is a Hidden Secret of great food and more (4/06)

As a BBQ lover, I recently got to the point of being so disappointed with LA Bar BQ the thought occurred that maybe I only liked "the idea" of BBQ.

 

Then a friend enticed me to the new Baby Blues Bar BQ in Venice, where two young guys, who saw in L.A. a place for their unique food, lovingly operate the place: North Carolina born and bred Jimmy Peterson and Danny Fisher, whose parents operated the long-time, award-winning Sportsters in Philadelphia.  The first day 68 people walked in and its been growing ever since so I wanted you in at the beginning.

It’s a small dining room made intimate with artwork on the wall and in the tables, candle-lit at night, adjoining a room with counter service where you can watch the cooks—and airy — when I asked to see how the meat was cooked on the whistle-clean premise, they showed me the well thought-out vent system they specifically developed for their high quality, grain fed meat.   

Danny and Rick and Nick can tell you about their backgrounds and how they developed their recipes, some going back 100 years, including family secrets for digging pits in the backyard to cook whole hogs in the south and recipes, including their collard greens and creamed spinach.  The spiked corn bread and the cob corn (with a taste of cheese, chipotle, lime juice) are new. 

I know you could describe the food more beautifully than I so just let me say it is the best I’ve ever eaten. THE BEST.  The beer braised beef brisket does melt in your mouth. Before I could decide which I liked best —  the Memphis style "long bone" pork ribs or the smoked dry rub baby back ribs, I finished both.  They also prepare Marion BBX Chicken and "Miss Brown" pulled pork. The Texas style Beef Ribs are huge and delicious on the bone. If you want to try something besides the meat, go for the Incredible BBQ Shrimp that are so tasty or the Blackened Catfish that is so tender.

The new Baby Blues Bar BQ in Venice offers a rustic change of pace with dine-in or take out holiday food.  Beer braised beef brisket, Memphis style "long bone" pork ribs, smoked dry rub baby back ribs are original family recipes prepared with grain-fed meat, along with Marion BBQ Chicken and "Miss Brown" pulled pork.  Young owner-chef Jimmy Peterson and his co-chef, Danny Fisher, will even smoke a turkey for you if you bring it in yourself. 

North Carolina born and bred Jimmy Peterson and Danny Fisher, whose parents created the long-time, award-winning Sportsters in Philadelphia, developed their recipes from family collections, some going back 100 years, including a full variety of vegetarian dishes from collard greens to creamed spinach.  The spiked corn bread and cobcorn (with a taste of cheese, chipotle, lime juice) are new. 

Jimmy made the small dining room intimate with his own artwork on the wall and in the tables, candle-lit at night, adjoining a room with counter service where you can watch the cooks in an airy, whistle-clean space because of the specifically designed, elaborate vent system.  This is a total casual atmosphere with fantastic Blues Muisc being played in the background constantly.
