Hyatt Regency Century Plaza Presents Paleo Haute Cuisine – June 18,2014

Breeze Sous Chef Ali Parvinjah, who took the lead in designing both the Vegan and Paleo Menus at  the Hyatt Regency Century Plaza  just got back from a whirlwind tour in London assisting the Hyatt London hotels to launch their vegan menus jut in time for their vegetarian week.


Now guests can taste all his new dishes at a special dinner June 18 at the Hyatt Regency Century Plaza    The dinner is $55 for a 5-course meal, which is available all evening.

His extraordinary Vegan menu led to him leading master classes on Vegan and Paleo cooking for all London Hyatt Regency hotels.

What is Paleo? Enthusiastic Adrienne DeVore, of the hotel, explains that, “it is based on the idea of consuming what our ancient ancestors did in the Paleolithic era — whole, unprocessed, nutrient-dense, nourishing foods like grass-fed and pastured meats and eggs, wild-caught seafood, fruit, fungi, roots, nuts and vegetables. 

Followers believe that that the advancement of agriculture and grain-based diets is a large cause of modern disease and obesity so the diet excludes grains, legumes, dairy, potatoes, refined salt and sugar, and processed oils.” 

The delicious Paleo meals are thoroughly satisfying, even in small portions, because the ingredients are so fresh, balanced, colorful and healthy.  And let’s accentuate the word, “balanced.” Actually for me, more than the guys, it was even enough for two meals for at 800 calories.  What was most surprising to me (a carbo-phobe at times) was my initial reluctance to eat the “potatoes” even though I read on the menu that they were actually leeks!

The new menu fits right in with the powerful and modern Hyatt philosophy of “Food. Thoughtfully Sourced. Carefully Served,” Chefs Felix Nappoly and Ali Parvinjah are encouraged to work with neighboring farmers to seek out the finest in regional and local organic produce and to continue their endeavors to provide guests with options in Vegan, Gluten Free, Perfectly Portioned Dishes (500 calories or less), and now Paleo offerings.

The  Hyatt’s global commitment to sourcing and serving food and beverages that are “good for our people, planet and communities.”  The state-of-the-art menu addition is designed for diners maintaining a strict Paleo diet, but really is appealing enough to tempt any palate.   That was also the case with last year’s Vegan Menu introduction, Breeze chefs are again reaching beyond a traditional hotel dining repertoire to bring guests the most current in dietary and culinary standards.

 

A Typical Paleo Menu

Each Meal features choices of appetizers, entrees and desserts so satisfying they appeal really to everyone.

Baby Organic Kale with bacon, pomegranate and preserved lemon vinaigrette

Roasted Butternut Squash Bisque

Char Grilled NY Steak, grainy mustard pan sauce, sautéed winter greens

Seared Seabass, roasted artichokes, kalamata olive-tomato ragu, cauliflower “rice,”  pinenuts

Mason Jar Paleo Pumpkin Pie with coconut whipped cream (crust is made with coconut flour, agave, sea salt, coconut oil and egg whites; filling is made with eggs, maple syrup, spices, fresh roasted pumpkin, coconut milk; whipped “cream” is whipped coconut fat)

The Holiday Paleo Menu includes:

Thanksgiving – Herb Roasted Sliced Turkey with apple sausage stuffing muffin (house made pork sausage, veggies, almond meal, herbs, spices and eggs) and Green Bean Casserole (homemade vegan, gluten free mushroom soup, beans, homemade onions fried with coconut flour)

Christmas-New Years – Herb Cashew Crusted Prime Rib of Beef with mushroom jus, spiced mashed sweet potatoes, roasted organic baby carrots and grilled asparagus
